I recently got a wireless Model O and so far it’s been amazing with one exception. When I adjust the profiles and their associated keybinds in the Glorious CORE software, the mouse will retain the keybinds of Profile 1, regardless of what profile I have as active.

I would look to run Core V1 over Core V2. There are some know issues with V2 that they are working on, so I would give the older software a try to see if they keybinds work appropriately, till Core V2 is updated.
